Recipe: Green Tomato Chutney

This recipe is provided by Master Gardener Jane
Green Tomato Chutney
(Veg should be weighed after preparing)
450g      Apples
Cooking or eating or mixture
450g      Onions
White or red, red gives a pink tinge to finished product
450g      Tomatoes
Green or red
1/2 pint Pickling vinegar
225g       Sugar
Cheap old white will do, brown gives a darker product.
Mustard seeds and sultanas can be added as an optional extra also chilli/cayenne if you like it hot.
Crunch all the veg in a processor with the largest grating blade then put everything in a large pan and boil for around 30 minutes, maybe a bit longer. Then jar as usual.
The recipe also calls for salt but I leave it out to make it healthier. This does not appear to affect the overall effect or storage quality at all.
I have kept this chutney for up to three years.

Free cooking course: Spalding Feb 2014

Due to popular demand, another free six week cooking course returns to South Holland.

From Friday 7th February 2014, from 10am – 12 noon at the Lime Court Community Centre in Spalding, the course will cover seafood, pasta dishes and recipes low in sugar, low fat sauces, batch cooking, healthy alternatives, cooking on a budget and basic nutrition.

What an excellent time to refresh your vigor towards your new years resolutions! Places are limited so book early.

Community cooking in Lincolnshire

Through Lincolnshire County Council’s Public Health department and the local district councils there are a range of cooking and growing initiatives for all the community to get involved in. The Lincolnshire Food and Health programme includes three strands, community cooking, community growing and Garden Organic’s Master Gardener project.

Community Cooking

Community cooking aims to build confidence, develop knowledge and improve skills around healthy eating and cooking. There are a range of practical cooking courses happening across the county for those who need a little extra help in the kitchen. There are also community demonstrations and roadshow activities happening throughout the year so plenty of opportunities to get involved.
